Fresh summer salad with watermelon, crayfish & mint dressing

A refreshing salad ideal for hot days, combining juicy watermelon, crisp vegetables, and succulent crayfish tails, all brought together with a zesty mint dressing. Serve as a vibrant side dish or as a light main course.

Ingredients:

  • 1 cucumber
  • Approx. 300g watermelon
  • 1 red onion
  • A handful of cherry tomatoes
  • Approx. 200g crayfish tails
  • Light lettuce of your choice
  • 100g feta
  • A handful of fresh mint leaves
  • 2 tbsp lime juice
  • 200ml olive oil
  • 50ml cold water
  • Salt & freshly ground black pepper

Preparation:

  1. Wash and tear lettuce into bite-sized pieces and place in a large salad bowl.
  2. Quarter cucumber lengthwise and slice thinly.
  3. Peel and thinly slice the onion.
  4. Dice watermelon and crumble feta.
  5. We left the tomatoes whole but you can halve or quarter them if you like and add to the bowl.
  6. Drain and rinse crayfish tails, add to the bowl
  7. Toss all ingredients together

For the dressing:

  1. Finely chop mint.
  2. Whisk with lime juice, olive oil, water, salt, and pepper.
  3. Drizzle over salad just before serving.

Vegetarian broccoli and feta bake

This summery bake is light and satisfying—a perfect choice for a warm evening meal.

Ingredients (serves approx. 8):

Pastry:

  • 500g all-purpose flour
  • 200g cold butter, cubed
  • 100ml cold water
  • Pinch of salt

Filling:

  • 500g broccoli
  • 150g feta cheese
  • 1 large yellow onion
  • 2 garlic cloves
  • Fresh parsley
  • 1 tbsp vegetable stock powder
  • Butter for sautéing

Egg filling:

  • 400 ml milk
  • 4 eggs
  • 100g grated hard cheese
  • Freshly ground black pepper

Preparation:

  1. Cut butter into flour, add water, and knead into a smooth dough. Chill.
  2. Roll dough and line a greased baking dish. Chill again.
  3. Preheat oven to 225°C.
  4. Sauté onion and garlic in butter. Cut broccoli into small florets and sauté lightly.
  5. Season with parsley and stock powder.
  6. Place vegetable mixture into pastry shell and crumble feta on top.
  7. Whisk eggs with milk, cheese, and pepper. Pour over filling.
  8. Top with reserved broccoli florets. Bake for 35–40 minutes until golden brown.

Perfect for summer garden parties

Warm evenings and garden gatherings call for simple summer recipes that are both fresh and visually appealing.

Cured herring and potato salad with egg and dill

Matjes herring is a young, lightly cured herring with a mild, slightly sweet flavour and tender texture. It’s a popular choice for summer dishes but can be substituted with other cured white fish like pollock or haddock. This salad offers a fresh, summery twist on a classic combination.

Ingredients:

  • 500g small new potatoes
  • 4 matjes herring fillets (or substitute with another cured white fish such as pollock or haddock)
  • 4 eggs
  • 1 small red onion
  • 1 organic lemon
  • 1 cup sour cream or crème fraîche
  • Fresh dill
  • Optional: trout caviar (a popular addition in Sweden and the Nordic countries)

Preparation:

  1. Boil the potatoes, cool, and halve them.
  2. Soft-boil the eggs for 7–8 minutes, peel and halve.
  3. Cut the herring into pieces, finely chop the onion and slice the lemon thinly.
  4. Arrange all ingredients on a platter and top with sour cream and fresh dill.
  5. Optional: garnish with fish roe and serve with crusty bread.

A strawberry cake for the summer

A true summer classic in the Nordics—a light sponge layered with vanilla cream and sweet strawberries.

Ingredients (serves approx. 10):

Sponge:

  • 4 eggs
  • 200g sugar
  • 100g plain flour
  • 100g potato flour or cornflour
  • 1 tsp baking powder

Vanilla pastry cream (custard):

  • 500 ml whole milk
  • 1 vanilla pod or 1 tsp vanilla extract
  • 4 egg yolks
  • 100g caster sugar
  • 40g cornflour
  • 25g unsalted butter

Filling & decoration:

  • Approx. 1kg fresh strawberries

Preparation:

  1. Preheat oven to 175°C.
  2. To make the sponge, whisk eggs and sugar until pale and fluffy.
  3. Sift in the plain flour, potato flour (or cornflour), and baking powder, then gently fold into the egg mixture.
  4. Pour batter into a greased 24 cm springform tin and bake for about 30 minutes or until a skewer comes out clean.
  5. Cool the sponge completely, then slice into three even layers.

To make the vanilla pastry cream (custard):

  1. Heat the milk and vanilla pod (split and scraped) or vanilla extract in a saucepan until just below boiling point.
  2. Remove from heat and allow to infuse for 10 minutes.
  3. In a bowl, whisk together the egg yolks, sugar, and cornflour until smooth and pale.
  4. Gradually pour the hot milk into the egg mixture, whisking continuously to prevent curdling.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a gentle boil.
  6. Remove from heat and stir in the butter until smooth.
  7. Transfer to a bowl, cover with cling film directly on the surface to prevent a skin forming, and chill until cold.

To assemble:

  1. Whip the chilled pastry cream slightly until smooth but still thick enough to spread.
  2. Slice strawberries.
  3. Layer the cake: sponge, pastry cream, strawberries; repeat for all layers.
  4. Finish with a layer of cream and decorate with strawberries.

Lemon Posset

A luscious, tangy dessert served elegantly in lemon shells.

Ingredients (serves 4):

  • 3 lemons
  • 300ml heavy cream90g granulated sugar

To garnish:

  • Edible flowers or finely grated lemon zest

Preparation:

  1. Halve two lemons, scoop out flesh. Juice the lemons and strain.
  2. Bring cream and sugar to a boil, stirring. Add lemon juice and zest from the third lemon. Strain into a jug.
  3. Pour into hollowed lemon shells. Chill for several hours, ideally overnight, until set.
  4. Garnish with edible flowers or lemon zest before serving.

Baked cheese with figs and herbs

A beautifully simple summer recipes that pairs creamy cheese with sweet figs and fragrant herbs.

Ingredients:

  • 200–250g goats cheese or feta
  • 3–4 fresh figs
  • 1 tsp honey
  • Fresh thyme or rosemary
  • 1 tbsp olive oil
  • Freshly ground black pepper

Preparation:

  1. Preheat oven to 180°C.
  2. Place cheese in a small baking dish. Quarter figs and arrange on top.
  3. Drizzle with honey, olive oil, herbs, and pepper.
  4. Bake for 10–15 minutes until cheese is lightly golden.

Peach-vanilla spritz

A bright, fruity cocktail perfect for summer celebrations.

Ingredients (serves 2):

  • 1 ripe peach, peeled and sliced
  • 10cl white peach liqueur or peach vodka
  • 200ml dry Prosecco or Cava
  • 50ml sparkling water

Preparation:

  1. Divide peach slices between glasses.
  2. Pour peach liqueur over fruit.
  3. Top with chilled Prosecco and a splash of water.
  4. Stir gently and serve immediately.

Tip: For an extra layer of flavour, infuse the drink with vanilla seeds scraped from a pod 1–2 hours before serving.

Nothing says summer quite like rhubarb. This crumble balances sweet, buttery topping with rhubarb’s delightful tartness—a perfect summer recipe to pair with coffee or vanilla ice cream.

Ingredients (serves approx. 6):

  • 400g rhubarb
  • 125g butter
  • 200g rolled oats
  • 150g sugar (or less, to taste)
  • 50ml heavy cream
  • 50ml light syrup (such as corn syrup)
  • 90g all-purpose flour
  • 1 tsp vanilla sugar
  • Pinch of salt
  • ½ tsp baking powder


Preparation:

  1. Preheat oven to 150°C. Grease a baking dish.
  2. Melt butter with cream and syrup and then stir in the dry ingredients.
  3. Wash, peel, and cut rhubarb into 2cm pieces.
  4. Place rhubarb in dish and top with crumble mixture.
  5. Bake 40–50 minutes until golden and crisp.

Cold brew vanilla latte

An elegant summer recipe to help you cool off on hot days.

Ingredients (serves 2):

  • 300ml cold brew coffee (see below)
  • 200ml milk or plant-based alternative
  • 1–2 tsp vanilla syrup, to taste
  • Ice cubes
  • Optional: milk foam or vanilla ice cream

For cold brew:

  • 50g coarsely ground coffee
  • 500ml cold water

Cold brew preparation:

  1. Combine coffee and water. Stir.
  2. Cover and let steep at room temperature for 12–18 hours.
  3. Strain through a coffee filter or fine sieve.

How to assemble your vanilla latte:

  1. Fill glasses with ice cubes.
  2. Add vanilla syrup.
  3. Pour in cold brew to about two-thirds full.
  4. Add milk, either frothed or cold.
  5. Top with foam or a scoop of vanilla ice cream if desired.

Seasonal summer ingredients

Summer recipes shine brightest when fresh, seasonal ingredients take centre stage. Sweet or savoury, local produce delivers vibrant flavour and effortless elegance.

Seasonal summer ingredients:

  • Strawberries, raspberries, blueberries
  • Elderflower, rhubarb
  • New potatoes, fresh dill
  • Salmon, herring, cheeses
  • Cinnamon, cardamom, vanilla

Homemade Gelato

When the sun blazes, there’s nothing more luxurious than a perfect summer recipe for homemade gelato. Lower in fat and creamier than regular ice cream, gelato is the perfect summer indulgence.

Base recipe (serves approx. 8):

  • 550ml whole milk
  • 150ml heavy cream
  • 150g sugar
  • 2 tsp cornstarch
  • 1 egg yolk
  • 1 vanilla pod

Optional:

  • 750g fresh blueberries (substitute for any berry or fruit you may like)
  • 4 tbsp sugar

Preparation – base gelato:

  1. Gently heat less than half the milk with cream and vanilla seeds (do not boil).
  2. Mix remaining milk with sugar and cornstarch; add to the warm mixture.
  3. Simmer gently, stirring until thickened.
  4. Beat egg yolk in a bowl. Gradually stir in some warm mixture, then return all to the pan.
  5. Heat gently while stirring. Cool completely.
  6. Chill for several hours, then churn in an ice cream maker until creamy. Alternatively, freeze and stir regularly.
  7. Transfer to a container and freeze another 2 hours.

For blueberry gelato:

  1. Simmer blueberries with sugar until slightly reduced.
  2. Cool and fold into gelato in step 6.
