Festive food for a summer garden party

The lovely summer weather has finally arrived and that means plenty of time enjoying the sun's warming rays in the garden with our loved ones. It also means plenty of garden parties and alfresco dining in which case you’re going to need some festive recipes for the food for your summer garden party.

1. PESTO POTATO SALAD

A classic potato salad is a given on the menu of any summer garden party, but this pesto potato salad adds a summery Mediterranean twist to this classic dish.

Ingredients:

  • 2 tbsp crème fraiche
  • 2 tbsp pesto
  • 4/5 large sundried tomatoes, finely chopped
  • 900g new potatoes
  • 1 tbsp pine nuts roasted
  • Fresh basil to garnish

How to:

  • Boil the new potatoes in a pot until tender, remove the water and allow the potatoes to cool
  • Blend together the crème fraiche and pesto in a bowl, add the chopped sundried tomatoes and then add the cooled potatoes to the bowl and stir to combine.
  • Dry roast the pine nuts over a medium low heat (keep the nuts moving as they will burn easily) scatter the nuts and fresh basil over the top of the salad.

2. VÄSTERBOTTEN PIE

Västerbotten pie is a true Swedish summer menu classic. A simple pie made with tangy västerbotten cheese and served with a refreshing salad, this is sure to be a crowd pleaser.

Ingredients:

Pie base:

  • 100g butter
  • 100g flour
  • 2 tbsp cold water

Filling:

  • 3 eggs
  • 250ml heavy cream
  • 100ml milk
  • 300g västerbotten cheese (can substitute with cheddar if you cannot find västerbotten)
  • A pinch of salt and pepper to taste.

How to:

  • Set oven to 200 degrees
  • Rub the butter and flour together using your fingers until it looks like bread crumbs.
  • Add the water and combine to make a dough.
  • Roll out the dough and place in a 24cm pie dish.
  • Place the dish in the fridge for 30 minutes.
  • Remove from the fridge and use a fork to poke holes in the dough and back in the oven for about 10 minutes, allow to cool before adding the filling.
  • Whisk together the eggs, cream, milk and salt and pepper.
  • Mix in the cheese and pour the mixture into the cooled pie crust.
  • Bake in the oven on the middle shelf for 30 minutes or until the pie is golden and bubbly on top.

3. BUBBLY SUMMER PUNCH BOWL

What says summer garden party more than a deliciously fruity punch bowl? This recipe combines the most Swedish of summer ingredients in the form of elderflower and strawberries with fresh mint, lemon and a good drop of sparkling wine.

Ingredients:

  • 1 Lemon
  • 1 Lime
  • A handful of fresh mint
  • 200g fresh strawberries
  • 200ml Elderflower cordial (concentrated)
  • 750ml Sparkling wine <br>

How to:

  • Thinly slice the lemon and lime and quarter most of the strawberries
  • Pick some mint leaves and add to a punch bowl a long with the fruit.
  • Pour over the concentrated elderflower cordial and the sparkling wine and stir to combine.
  • For a non-alcoholic version substitute the sparkling wine for bitter lemonade or alcohol-free sparkling wine if you would prefer.
  • Serve over ice with a strawberry to garnish.

  2. We love a warm smoked salmon with the tangy Västerbotten pie
  3. Last but not least, you can’t go wrong with a delicious crusty loaf of bread, we opted for a sourdough but feel free to choose your own favourite.
